Cheese and
Broccoli soup
4 C cubed potatoes
1 onion chopped
2 C sliced carrots
2 C chopped celery
3 C cut broccoli
Boil all veggies except
broccoli in 2 C water for about 10 min.
Add the broccoli and boil for
about 5-10 more minutes—Do not drain the water
Soup Base
½ C margarine
3 T flour
2 C milk
1 lb Velveeta cheese cubed
1 t dry mustard
¼ t pepper
3 chicken flavored
bouillon cubes
In a saucepan melt the
margarine. Stir in the four. Add the milk and cook, stirring constantly
until thick. Add cheese and other
ingredients. Mix until smooth
Add to un-drained veggies
and heat together—but don’t boil
