Zucchini Muffins
2 large eggs
1/2 cup olive oil (or melted butter)
3/4 C brown sugar
1/2 teas vanilla
2 C grated zucchini
2 C white flour
1 teas baking powder
1/2 teas salt
1 teas cinnamon
1 teas cardamom
1 C raisins
1 1/2 cup chopped walnuts
Preheat oven to 350 degrees. In large bowl, mix eggs, olive oil, brown sugar and vanilla. Stir in zucchini. In separate
bowl, sift together flour, baking powder, salt, cinnamon and cardamom.
Stir in dry ingredents until just combined. (Do not overmix). Fold in
nuts and raisins.
Spoon into greased muffin tins, to about 3/4 full. Bake 20 to 25 minutes until skewer comes out clean.
