Raisin Caramel Dumplings
1 cup water
1 cup brown sugar, packed
2 tsp. vanilla extract
2 tsp. baking powder
1 T. vegetable oil
1/2 cup raisins
2 T. butter or margarine
1 cup flour
1/4 tsp. salt
1/2 milk
Combine water, raisins, brown sugar, butter and vanilla in a heavy saucepan with a tight fitting lid. Bring to a boil; simmer uncovered for 5 min. In a small bowl, mix flour, sugar, baking powder, and salt; add oil and milk and mix well. Drop by spoonfuls onto simmering sauce mixture. (Be sure to simmer sauce, not boil; a hard boil will break the dumplings apart and sauce could scorch if heat is too high.) Cover and cook, without peeking for 6 min. or until dumplings are done. Serve at once with milk or light cream. Makes a quick and tasty Sunday night snack. Preparation time 5 min. plus cooking time. Serves six.
