BBQ Beef Sandwiches

BBQ Beef Sandwiches

2 lbs beef roast
1 medium onion
2 cloves of garlicBBQ sauce
Hamburger buns

Put roast, onions and garlic in crock pot. Cook on low for 8 - 10 hours. Drain liquid. Shred meat and add BBQ sauce. Serve.

Beef Chimichangas

Beef Chimichangas
1 t. salt
2 lbs. lean ground beef
2 cloves garlic, crushed
2 t. ground cumin
2 t. oregano
1/2 c. canned green chiles, chopped
1/2 c. taco sauce
1/2 c. sour cream
1/4 c. cider vinegar

Serving day:
1/2 c. butter
9 - 7 inch flour tortillas

Sprinkle salt in meduim skillet. Place meat over medium heat. Add beef, garlic and spices. Cook until meat loses pinkness. Stir in remaining ingredients. Remove from heat and cool. Freeze meat mixture, using freezer bag method.

Serving day instructions: In 8 inch skillet melt butter. Dip both sides of 1 tortilla into butter; drain off excess. Mound 1/3 c. filling on center of tortilla. Fold tortilla in an envelope fashion. Place seam side down in ungreased 11x7 baking dish. Preheat oven to 500 degrees. Bake until crispy, about 15 minutes. Sprinkle with cheese, lettuce, tomatoes and additional sour cream.Makes 9 servings

Mexican Pork Chops

4 pork chops
1 onoin, chopped
1 (14 1/2 oz.) can stewed tomatoes
2 cups frozen corn
1/2 cup salsa
1 1/2 teaspoons oregano
1/2 teaspoon cumin

Mix onion, tomatoes, corn salsa, oregano and cumin. Pour over pork chops. Bake at 350 degrees for 45 minutes. Serve with rice. If freezing put pork chops in freezer bag and put tomato mixture over chops and freeze.

Stromboli

1 loaf bread dough
8 slices deli ham, thinly sliced
20 slices pepperoni
8 slices provolone cheese
2 Tbsp. shredded pramesan cheese
1 cup mozzarella cheese
1 tsp garlic powder
1 tsp dried oregano
1/4 tsp dried parsley flakes
1/4 tsp pepper
1 egg yolk, beaten

Let dough rise until doulbled. roll loaf into a 15 x 12 inch rectangle. Arrange meats and cheeses down the middle of rectangle dough. Sprinkle each layer with spices. Fold dough around meat and seal pressing dough together on seams and ends. If freezing, wrap loaf with plastic wrap and then foil. Make a note on preparation instructions to beat an egg and brush it on the loaf before baking.
