Chess Cake Bars
1 box yellow cake mix
1 egg
1 stick softened margarine.

Combine these and pressed into greased cookie sheet

1 8oz pk cream cheese
2 eggs
1 lb powdered sugar
1 tsp lemon extract

Combine these and pour over cake mix pressed in pan

Bake at 325 for 30 minutes or until shiny.
Cool and cut into squares.

Cookies and Cream Cheesecake Cupcakes
From
Martha Stewart's Cupcakes
Makes 30 (Note: I halved this recipe and it was very easy, 30 of these cupcakes would surely be the death of me)
·  Ingredients:
·  42 cream-filled sandwich cookies, such as Oreos, 30 left whole, and 12 coarsely chopped
·  2 pounds cream cheese, room temperature
·  1 cup sugar
·  1 tsp vanilla extract
·  4 large eggs, room temperature, lightly beaten
·  1 cup sour cream
·  Pinch of salt
1. Preheat oven to 275 degrees. Line standard muffin tins with paper liners. Place 1 whole cookie in the bottom of each lined cup.

2. With an electric mixer on medium high speed, beat cream cheese until smooth, scraping down sides of bowl as needed. Gradually add sugar, and beat until combined. Beat in vanilla.

3. Drizzle in eggs, a bit at a time, beating to combine and scraping down the sides of the bowl as needed. Beat in sour cream and salt. Stir in chopped cookies by hand.

4. Divide batter evenly among cookie-lined cups, filling each almost to the top. Bake, rotating pan halfway through, until filling is set, about 22 minutes. Transfer to wire racks to cool completely. Refrigerate at least 4 hours (or up to overnight). Remove from tins just before serving.
Strawberry Macaroon Cake
 
1 package yellow cake
1 egg
1/4 C oil
1/4 C water
1 C coconut
 
Mix and bake at 350 for 20 min. Cool. Top with 1 1/2 C sweetened whipping cream or cool whip. Spread fresh strawberries over top and then sprinkle with coconut.
 
Bundt Cake
 
Yellow cake mix
1/4 C oil
4 eggs
1 package instant vanilla pudding
3/4 C water
3/4 C sour cream
 
1/3 C sugar
2 Tbs cinnamon
(mix these together)
 
Spray pan. Dust with cinnamon sugar mixture. Pour 1/3 cake, 1/3 cinn/sugar until you have done it 3 times. Bake according to cake mix.

Banana Cake
 
11/4 Cup Sugar
1/2 Cup Butter
2 Eggs
4 Tbps Milk
2 Cup Flour
1/2 Tsp Baking Powder
1/2 Tsp Salt
1 Tsp Vanilla
1 Cup Mashed Bananas (about 3)
Nuts Optional
 
1 Tsp Baking Soda into 1/2 Cup Hot Water
Add to Cake Batter
Mix together and pour into greased cake pan
Bake 350 about 35 min
Frost with favorite Vanilla Frosting
 
Chocolate Chip Date Cake

1 cup chopped dates
1 1/2 cup boiling water
1 tsp. soda

Pour water over dates. Add soda and cool.

1 1/2 cups shortening
2 eggs beaten
1 cup sugar

Cream together and add to the date mixture.

1 1/2 cup + 3 T. flour
1/2 tsp. salt
3/4 tsp. sugar

Sift together and combine with date mixture.

Put in greased 9x13 or 10x15 pan and sprinkle over the top with 1/2 cup of each: brown sugar, pecans or walnuts and chocolate chips. Bake at 350.

Pumpkin Cake
1 yellow cake mix (reserve 1 cup)
1/2 cup butter
1 egg

Filling
2 cups packed pumpkin (sprinkle with cinnamon, nutmeg and salt)
2 eggs
2 tsp vanilla
1/2 cup brown sugar
1/3 cup evaporated milk
1/3 cup milk

Topping
1 cup reserved cake mix
1/4 cup butter
1 tsp cinnamon

Grease and flour bottom of 9x13. Combine first 3 ingredients. Press into pan with a wet spoon. Combine filling ingredients, pour over crust. Mix topping and sprinkle over top. Bake 350 1 hour and 5 min. Serve with whipping cream.
