Grandma’s Sloppy Joes


1 Pound of Hamburger, browned
1 Can Chicken Gumbo Soup
1 tsp. Onion Powder or add chopped onion to taste.
1 tsp. Garlic Salt
5 TBSP. Ketchup
1 TBSP. Mustard
½ tsp. Pepper

Combine all ingredients in a large sauce pan until bubbly and hot.

Spinach Salad

1 Head of Lettuce, Chopped
1 Bunch of fresh Spinach, washed and dried
1 Cup Mushrooms
1 Cup Monterey Jack Cheese
1 Purple Onion (thin rings)
½ lb. Bacon, cooked and crumbled (add just before serving)
1 Can Mandarin Oranges, drained
½ Cup slivered almonds
3 TBSP.  Sugar

DRESSING:
1 Cup Sugar
2 tsp. Dry Mustard
2 tsp. Salt
2/3 Cup Red Wine Vinegar
3 TBSP. Onion Juice (red onion pureed in blender)
1 ½ Cup Oil, added slowly
3 tsp. Poppy seeds

Mix all ingredients except for bacon, oranges and almonds.  Add just before serving.  Place almonds and sugar in a saucepan over low to medium heat until caramelized.  Scrape into a plastic bowl to avoid sticking to the pan.  Crumble over the top of the salad just before serving.

Mix all dressing ingredients in blender and refrigerate for at least one hour.

Super Simple one pan brownies-THe best!


1 Cup Butter
2 Cups Sugar
1 ½ Cups Flour
¼ Cup Cocoa
2 tsp. Vanilla
1 tsp. Salt
4 Eggs

CHOCOLATE FROSTING:
6 TBSP. Butter, softened
3 Cups Powdered Sugar
¼ Cup Cocoa
1 tsp. Vanilla
6-8 TBSP Milk

Melt butter in a saucepan.  Add other ingredients, stirring as you add.  Pour from saucepan into a greased 9x13 pan.  Bake at 375 for 15-20 minutes.   Top will bubble when it is done.   Frost and enjoy.  

VARIATION:  MINT BROWNIES
¼ Cup Softened Butter
2 ½ Cups Powdered Sugar
1 ½ to 3 TBSP. Milk
½ tsp.  Peppermint Extract
3 drops green food coloring

Top with ¾ Cups melted chocolate chips and 3 TBSP. butter and smooth over top
Frosted Peanut Butter Bars (10x15 pan)

1 Cup Butter, softened
1 ½  Cups Packed Brown Sugar
1 Cup Sugar
2 ½  Cups Creamy Peanut Butter, divided
1 Egg
1 ½  tsp. Vanilla
2 ½  Cups Oats
2 Cups Flour
1 tsp. Baking Soda
½  tsp. Salt

CHOCOLATE FROSTING:
6 TBSP. Butter, softened
3 Cups Powdered Sugar
¼  Cup Cocoa
1 tsp. Vanilla
6-8 TBSP Milk

Mix butter and sugars.  Add 1 Cup peanut butter, egg, and vanilla; mix well.  Combine oats, flour, baking soda and salt: add to the creamed mixture.  Spread into a greased 10x15" pan.  Bake at 350 for 13-17 minutes.  Cool slightly on a wire rack, about 12 minutes.   Spread with remaining peanut butter.  Cool completely.

For frosting, combine butter, sugar, cocoa, vanilla, and enough milk to achieve spreading consistency.  Spoon over peanut butter bars and then spread evenly.
