BBQ Chicken Pizza

Dough

6 cups flour
1 1/2 TBS yeast
1 1/2 TBS salt
1 TBS sugar
1/4 cup butter
3 cups water

Put 2 cups flour in a bowl with other dry ingredients. Mix in 1 1/2 cups water and put remaining 1 1/2 cups water in a sauce pan with butter and heat on low to melt the butter (you do not want it to boil). As soon as the butter is melted add it to the rest of the dough and mix in slowly. Then add the remaining flour until it is the consistency that you like, then need it for 2-3 minutes. Then let it rise for an hour. Punch down the dough and let rise for another hour. Quarter the dough and shape each ball into pizza crusts. Place on a greased pizza pan or divide and freeze. Add toppings (sauce, cheese, meat, veggies, etc.). Cook at 400-degrees for 20 minutes or until the bottom crust is golden brown. (This recipe will make four half meals or two full meals).

French Dip Sandwiches

1lb sliced roast beef
Provolone Cheese
French Onion Soup
Rolls

Cook the French onion soup in a pan over the stove. Add the meat to the pan for a couple minutes until hot. Remove the meat from the broth, leaving the broth to dip the sandwiches in later, and stack meat on rolls with cheese. (You can butter the rolls if you like, it tastes better, but obviously adds calories). Pop the sandwiches into a toaster oven or broiler on low until the buns get toasted and the cheese gets melty. (If you use a broiler, it can burn quickly so watch the sandwiches very carefully).

Broccoli Bacon Quiche

Broccoli Bacon Quiche
9" pie crust
4 eggs
1 1/2-2 cups of milk, half and half, or heavy cream (depending on how much less fatty or rich you want it)
1 cup cheese (I typically use cheddar, but Swiss is better)
4 slices of bacon, crumbled
2 cups frozen broccoli, cooked
1/4 tsp salt
1/8 tsp garlic powder
1/8 tsp pepper or lemon pepper
Preheat the oven to 350-degree. Sprinkle bacon, broccoli, and cheese at the bottom of the pie crust. Beat eggs, milk (or cream), and seasonings in a bowl. Pour mixture over the top of the ingredients in the pie pan. Bake for 30-35 minutes or until you can stick a knife in the center and it comes out clean.
