Homemade Egg Noodles

1 beaten egg
3 T. milk
1 tsp. salt
1 cup flour
Add milk and salt to egg. Beat well. Add flour and mix well. Roll thin. Let sit for 15 minutes. Cut into long narrow strips. Let stand another 15 minutes then add to boiling liquid (such as chicken broth for chicken noodle soup) and cook until done.

"No Peekie" Beef Stew

1 1/2 lb. stew meat
5 cubed carrots
5 cubed potatoes
2 chopped onions
1 qt. tomatoes
1 cup water
2 T. Worchestershire sauce
3 T. instant tapioca
1 tsp. salt
dash pepper
Cover tightly and bake at 250 for 6 hours. Do not peek or stir.

Healthy Baked Chicken Nuggets

2 large boneless, skinless chicken breasts, cut into bite sized pieces
salt and pepper to taste
2 tsp. olive oil
6 T. bread crumbs (whole wheat if you can find it)
2 T. panko
2 T. grated parmesan cheese
Olive oil spray

Preheat oven to 425. Spray baking sheet.

Put olive oil in one bowl. Mix bread crumbs, panko and parmesan in another bowl.

Season chicken with salt and pepper and put in bowl with oil. Mix so all chicken pieces are coated with oil. Put a few pieces at a time into the bread crumb mixture and then onto the baking sheet. Lightly spray with Pam and bake for 8-10 minutes. Turn over and bake til done, about another 4-5 minutes.

Easy Yummy Beef Casserole

Brown hamburger with cut up onion and celery. Drain. Add to 1 can cream of chicken soup, 1 can cream of mushroom soup, 1 1/2 can water, 1 T. soy sauce, 1/2 c. minute rice uncooked.

Bake 350 for 30 min. When done, top with chinese noodles.
Three pepper pasta

1 1/2 T. olive oil
1 yellow pepper, chopped
1 red pepper, chopped
1 green pepper, chopped
1 med. onion - sliced
2 cloves minced garlic
2 T. balsamic vinegar
2-3 T. fresh basil chopped
3 roma tomatoes chopped
1 1/2 tsp. sugar
1 can olives drained (optional)
salt and pepper to taste
12-16 oz. cooked pasta (I prefer bowtie)
Parmesan or asiago cheese on top

Heat oil and add peppers, onion, and garlic. Cook until peppers are tender. Add remaining ingredients except pasta and cheese. While veg are sauteing, cook pasta. Drain pasta well and place on platter. Top with pepper mix. Top with cheese. Can also add marinated chicken.

Linda’s Lasagna

Lasagna is made in layers or steps followed below.  Begin with a 9x13 pan and add ingredients from 1-8.

1.      ½ large can of spaghetti sauce
2.    Dry Lasagna noodles (uncooked)
3.    Hamburger (pre-cooked)
4.   Sour cream/cottage cheese mix (1 average container each)
5.    Shredded Cheese
6.   More Lasagna noodles
7.     ½ can spaghetti sauce
8.    More cheese

Cover with foil and bake at 375 for 1 hour

Creamy White Chili Recipe
·         4 Servings

Ingredients

·         1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes (2 c. cooked)

·         1 medium onion, chopped

·         1-1/2 teaspoons garlic powder

·         1 tablespoon canola oil

·         2 cans (15-1/2 ounces each) great northern beans, rinsed and drained

·         1 can (14-1/2 ounces) chicken broth

·         2 cans (4 ounces each) chopped green chilies

·         1 teaspoon salt

·         1 teaspoon ground cumin

·         1 teaspoon dried oregano

·         1/2 teaspoon pepper

·         1/4 teaspoon cayenne pepper

·         1 cup (8 ounces) sour cream

·         1/2 cup heavy whipping cream

Directions

·         Throw everything (except last 2 ingredients) in the crock pot for 6 hours on low heat.

·         Just before serving, stir in sour cream and cream.

·         Serve with tortilla chips.
Poppy Seed Chicken

2 c. cooked, shredded Chicken
1 can Cream of Chicken Soup
1 ½ c. sour cream
2 tubes Ritz crackers, crushed
1 stick butter, melted
1 T. poppy seed

1. Combine chicken, soup, and sour cream.
2. Combine crackers with butter and poppy seeds.
3. Mix half of #2 with #1.  Spread in greased 2 qt. casserole dish.  Top with remaining #2.

Bake 30 min. at 350 degrees.  Serve over rice.  Enjoy!

Chicken Cordon Bleu Casserole
 
Grease a 9 x 13 pan, then layer the following ingredients beginning with the rice:
 
2 cups cooked rice
3 cups cooked chicken
6 slices Swiss cheese
10 slices ham, diced
 
Mix together:
2 cans cream of chicken soup
1/2 cup milk
1/2 cup sour cream
Pour over the rice, chicken, cheese and ham.
 
In a ziplock bag crush 10 saltine crackers and add:
1/2 tsp. paprika
1/4 tsp. garlic salt
1/2 tsp. parsley
 
Sprinkle over soup mixture.  Bake at 350 degrees for 30 minutes.
 

Baked Sweet and Sour Chicken

The chicken coating:

3-4 boneless chicken breasts
salt + pepper
1 cup cornstarch
2 eggs, beaten
1/4 cup canola oil

The sweet and sour sauce:

3/4 cup sugar
4 tbs ketchup
1/2 cup distilled white vinegar
1 tbs soy sauce
1 tsp garlic salt

       Start by preheating your oven to 325 degrees. Rinse your chicken breasts in water and then cut into cubes. Season with salt and pepper to taste. Dip chicken into the cornstarch to coat then dip into the eggs.  Heat your 1/4 cup oil in a large skillet and cook your chicken until browned but not cooked through. Place the chicken in a 9x13 greased baking dish. Mix all of your sweet and sour sauce ingredients in a bowl with a whisk and then pour evenly over the chicken. Bake for one hour and during the baking process you will need to turn the chicken every 15 minutes.  
 
Chili's Queso1 can of Hormel chili- No beans
16-ounce box Velveeta Cheese 
1 C. milk 
2 teaspoons paprika 
½ tsp. ground cayenne pepper 
4 tsp. chili powder 
1 tablespoon lime juice 
½ tsp. ground cumin
 
First I put the chili and all the spices in the pan.  Next, add the cheese and lime juice- You can slice up your cheese or cube it to make it melt faster. Last, add the milk to get the desired thickness that you want. If you want it to be thicher, use a little less milk. Also after it cools it will get thicker as well.
Serve with chips and enjoy!


Crockpot Chicken Tacos

1 envelope Taco Seasoning
6 pieces Boneless, Skinless Chicken Breasts
1 jar Salsa (16 oz)

Dump everything into a crock pot and give it a little stir to blend the seasoning with the salsa. Cook on high for 4 to 6 hours or on low for 6 to 8 hours. When done, the chicken should shred easily when stirred with a fork.

For tacos, serve the chicken with soft flour tortillas, lettuce, shredded cheese and sour cream. This is very versatile and can be used for enchiladas, nachos, tostadas, etc. Any leftover chicken can then be used for tortilla soup (make it the next day or freeze the chicken to use at a later time).


Oven Baked Meatball Sandwiches
Ingredients
·         Sandwich rolls (cut with one side intact)
·         Cooked Meatballs (your favorite recipe or frozen, pre-made meatballs)
·         Pasta Sauce (homemade or jarred)
·         Shredded Mozzarella Cheese
Instructions
1.      Spray a baking sheet with cooking spray. Preheat oven to 400 degrees F.
2.      Place your frozen cooked meatballs or homemade cooked meatballs in a large pot. Cover with your pasta sauce. Gently fold the meatballs with the sauce, Heat the meatballs and sauce on low-medium, stirring occasionally, until the meatballs are heated thoroughly.
3.      Fill a roll with as many meatballs as you can fit (usually 4-5 meatballs, depends on size of meatballs and the size of the roll). Top with more pasta sauce from your pot. Place filled sandwich rolls closely on baking sheet. Top each sandwich with shredded mozzarella cheese.
4.      Bake until cheese is melted, hot, and bubbly.

Sour Cream and Bacon Crockpot Chicken

Serves: 8
Ingredients
  • 8 bacon slices
  • 8 boneless, skinless chicken breasts
  • 2 (10 oz) cans roasted garlic cream of mushroom soup
  • 1 cup sour cream
  • 1/2 cup flour (all purpose or gluten free blend)
  • Salt and pepper to taste
Directions
  1. Place the bacon in a large skillet and cook over medium-low heat until some of the fat is rendered. Be sure that the bacon is still pliable and not crisp. Drain on paper towels. If you use this method, reduce the flour to 1/4 cup. Or don’t cook the bacon and proceed with the recipe.
  2. Then wrap one slice of bacon around each boneless chicken breast and place in a 4-5 quart crockpot.
  3. In medium bowl, combine condensed soups, sour cream, and flour and mix with wire whisk to blend. Pour over chicken.
  4. Cover crockpot and cook on low for 6-8 hours until chicken and bacon are thoroughly cooked. You may want to remove the chicken and beat the sauce with a wire whisk so it is very well blended.
  5. Pour sauce over chicken.
  6. If you have a newer crockpot, check the chicken at 5 hours. The internal temp should be 160 -170 degrees F.
Notes
Serve over rice, couscous, or wide egg noodles.
**Gluten Free** Check labels. You can buy gluten free Cream of mushroom soup although many brands are not.
