Sweet and Sour Chicken
 
5-6 chicken breasts
1 C Catalina or Russian dressing
1 C apricot jam
1 1 oz. env. dry onion soup mix
 
Place chicken in crock pot. Combine dressing, jam and onion soup mix and then pour over top of chicken. Cover and cook on low for 3-4 hours.
Shred chicken and replace in crock pot for another 30 min. Serve over rice.
Chicken Fajitas
 
5-6 chicken breasts
2 1/2 C salsa
1 green pepper sliced
1 red pepper sliced
1 onion sliced
black beans
Tortillas
Optional toppings: guacamole, sour cream, lettuce, cheese, salsa
 
Place chicken breasts, salsa, peppers and onion in crock pot. Cook on low for 4-6 hours. Before serving,
remove chicken and shred. Replace in crock pot for another 30 min. Serve in tortillas.
 
 
 
Strawberry Macaroon Cake
 
1 package yellow cake
1 egg
1/4 C oil
1/4 C water
1 C coconut
 
Mix and bake at 350 for 20 min. Cool. Top with 1 1/2 C sweetened whipping cream or cool whip. Spread fresh strawberries over top and then sprinkle with coconut.
 
Old Time Beef Stew
 
2 lbs beef stew meat
2 Tbs shortening
1 tsp Worchestershire sauce
1 clove garlic
1 med onion sliced
1 or 2 bay leaves
1 Tbs salt
1 tsp sugar
1/2 tsp paprika
1/4 tsp pepper
6 carrots, sliced
4 potatoes cut in bite size pieces
3 Tbs flour
 
In dutch oven, brown meat in shortening, turning often. Add 2 C hot water and next 9 ingredients. Cover; simmer for 1 1/2 hrs. stirring occasionally to prevent sticking. Remove bay leaves and garlic. Add vegetables. Cover and cook 30-45 min. or until veggies are tender.
Slowly blend 1/3 C cold water into 3 Tbs flour. Stir slowly into hot stew mixture. Cook and stir until bubbly. Cook and stir 3 min. longer.
 
Steak and Gravy
 
1 round steak
1 can cream of mushroom
1/2 tsp minced onion
1 envelope brown gravy mix
Worchestershire sauce
salt and pepper
1/2-3/4 can water
 
Cut round steak in 3-4" pieces. Add steak and rest of ingredients to crock pot and cook on low for 8-10 hours or high for 3-4 hours.
Breakfast Casserole
 
1 lb mild sausage
6 beaten eggs
3/4 Tbs dry mustard
2 Tbs dried onions
12 oz. shredded cheddar cheese
1 can cream of mushroom
2 1/2-3 C milk
10 slices of bread cut in cubes
 
Cook sausage. Mix all ingredients in 9x13 pan. Cover with foil and let sit overnight in fridge or 3-4 hours works too. Bake at 300 degrees covered for 1 hour then 350 uncovered for another 30 min.
 
Chicken Noodle Soup
 
3-4 chicken breasts
1 qt water
4 medium carrots
3-4 celery stalks
1 Tbs sugar
1 tsp salt
1/4 tsp pepper
3 chicken bouillon cubes
Frozen egg noodles
 
Heat all ingredients except noodles and chicken to boiling in 4 qt dutch oven pan. Reduce heat. Cover and simmer until tender, about 45 min. Cook chicken and shred or cut up into 1" pieces. Cook noodles as directed on package. Add chicken and noodles to pot of vegetables and heat together.
 
Pork Tortilla
 
Pork shoulder
1 C brown sugar
1 20 oz. bottle of Coke
 
Put in crock pot all day on low or on high for about 5 hours.
Use 1 package tortillas from Costco
Add:
Shredded pork
Black beans
Rice
Cheese
Tomatoes
Sour cream
Guacamole
Green Goddess dressing
 
Bundt Cake
 
Yellow cake mix
1/4 C oil
4 eggs
1 package instant vanilla pudding
3/4 C water
3/4 C sour cream
 
1/3 C sugar
2 Tbs cinnamon
(mix these together)
 
Spray pan. Dust with cinnamon sugar mixture. Pour 1/3 cake, 1/3 cinn/sugar until you have done it 3 times. Bake according to cake mix.
