CHOCOLATE CHIP COCONUT  OATMEAL COOKIES

Bake at 350        

           

½ c margarine                                   
1 c flour

½ c brown sugar                            
  ½ t baking soda

½ c white sugar                             
  ½ t salt

1 egg                                                
 ½ t baking powder

1 t vanilla                                        
 1 c oatmeal

1 T milk                                           
 *3/4 c chocolate chips

 *1 c coconut

 *1 c walnut pieces                 

Mix dry ingredients and wet ingredients separately, and then mix them together.  Stir in chocolate chips, coconut and nuts last.  Put teaspoon sized balls of dough on a cookie sheet and bake 8-10 minutes.  *optional

Apricot Bars 

Bake at 375        

3 c flour                                                                       
2 c brown sugar

3 c oatmeal                                                                  
1 ½ c  butter

2 t baking powder                                                        
 2 c apricot jam

½ t salt                                                                            
 (1 pt. jar)

Mix dry ingredients together, and then add sugar and butter.  Mixture will be crumbly.  Reserve 1 ½ cup of this mixture for topping.  Pack remainder of mixture firmly into a large rimmed cookie sheet.  Spread jam over the top of mixture-almost to the edges.  Sprinkle reserved crumbs over jam.  Bake 20 -25 minutes  When cool cut into squares
