Pumpkin Bread
 
4 Cups Sugar
4 Cups Pumpkin
1 Cup Oil
Mix Together
 
5 Cups Flour
4 Tsp Baking Soda
1 Tsp Salt
1 Tbsp Cinnamon
1 Tsp Cloves
Optional Ingredients
Chocolate Chips
Nuts
Raisins
Bake at 350 45 min to 1 hour depending on size of loaf pan
Banana Cake
 
11/4 Cup Sugar
1/2 Cup Butter
2 Eggs
4 Tbps Milk
2 Cup Flour
1/2 Tsp Baking Powder
1/2 Tsp Salt
1 Tsp Vanilla
1 Cup Mashed Bananas (about 3)
Nuts Optional
 
1 Tsp Baking Soda into 1/2 Cup Hot Water
Add to Cake Batter
Mix together and pour into greased cake pan
Bake 350 about 35 min
Frost with favorite Vanilla Frosting
 
Oatmeal Bread
 
Pour 2 Cups boiling water over
1 Cups Oats
Let cool until just warm
Add: 2/3 Heaping Cup Brown Sugar
3 Tbsp Oil
2 Tsp Salt
5 Cups Flour
 
Dissolve 2 Tab Yeast in 1/3 Cup Warm Water
Add to Oat Mixture
 
Knead- Let rise 1 hour or until doubled
Form into 2 Loaves and put into greased bread pans. (large bread pans)
Rise until doubled
Bake 350 for 25-35 minutes
 
Italian Meatball Soup
 
1/2 lb Sausage
1/2 lb Ground Beef
1 Egg
(make meatballs, cook in fry pan)
 
1 Large Onion coarsly chopped
2 Cloves Minced Garlic
(Saute in 1 to 2 tsp Olive Oil)
 
2 to 3 Quarts Beef Broth
2 - 28 once cans Crushed Tomatoes
1 Cup Celery
2 to 3 Tab Parsley
1  Tsp Tyme
1  Tsp Basil
1 1/2 Cup Carrots
1 Cup Zucchini
4 Potatoes Cubed
1 Cup Green Beans (I just use a can of green beans)
(I sometimes add other veggies like Califlower, Brocoli, Peas, Corn, or what I have at my house)
1 Tsp Sugar
Salt and Pepper to taste
Cook until Vegetables are tender
Creamy Potato Soup or Clam Chowder
 
1 Cup Celery
1 Cup Onions
4 to 5 Cups Potatoes
Boil until soft with just enough water to cover veggies
 
In sauce pan combine
3/4 Cup Butter
3/4 Cup Flour
1 Quart Half and Half
1/2 Tsp Salt
1/2 Tsp Sugar
Pepper to taste
1 Tsp Basil
 
Once Rue is complete and veggies are soft combine the two. (Don't drain liquid from potatoes)
Potatoe soup is ready to eat.
If you want Clam Chowder add two cans of minced clams while you are cooking your potatoes.
Hot Fudge
 
1 Cup Water
1Tbsp Butter
Boil together
 
In a bowl combine
1 Cup Sugar
3 Tbsp Flour
3 Tbsp Hershey's Cocoa (unsweetned)
Mix togther and then add to boiling mixture
 
Lower heat and stir while it cooks. (around 5 min)
Turn off heat add 1 Tsp Vanilla and a shake of Salt
Thickens while it cools
Florentine Roll Ups
 
16oz Lasagne noodles
4 Cups Ricotta Cheese or Cottage Cheese
2 Cups Cheddar Cheese
1 Cup Chopped Spinach
1/2 Cup Sliced Green Onions
1 Egg
1/4 Tsp Salt and Pepper
Your favorite Spaghetti Sauce
 
Cook pasta according to package, drain, lay flat to cool.
In a large bowl, stir together ricotta cheese, chedder cheese, spinach, green onion, egg, and salt and pepper.
Spread about 1/3 cup cheese mixture on each piece of pasta to within 1 inch of the end; roll up.
In a 13x9 baking dish spread 2/3 cup spaghetti sauce, place roll ups seam down in dish, top with remaining sauce.
Sprinkle with parmesan cheese.
Bake at 350 for 30 min.
Clam Dip
 
1 Loaf Sourdough Bread
 
2 Pkgs 8oz Cream Cheese
2 Cans Minced Clams (use the juice of the clams)
1 Bunch Green Onions, finely chopped
 
In sauce pan combine cream cheese, clams, and onions
Simmer until well combined
Hollow out the Sourdough bread (as if you were doing a soup bread bowl)
Pour in your clam/cream cheese  mixture
Bake at 350 until bread is toasted about 5 to 10 min
